For the sausage slice it in half, make long strip,s then dice.
Place them in different small bowls or a plate.
Step 2:
If you are using a white bread loaf, cut 5 thick slices.

Next, get one slice of bread, cut a square in the middle, then remove it.
Do the same for the other slices.
Step 3:
Place a pan over medium heat, then pour some oil.
Mix all ingredients together.
Season the vegetables with 1/2 teaspoon of salt, then let them cook for a few minutes.
Once done, remove from the pan and transfer into a bowl.
Step 4:
Add 2 pieces of eggs to the vegetable mixture.
Stir well to beat the eggs.
Fill half of the bread with the vegetable mixture, then place 1 piece of mozzarella cheese on top.
Cover it with the middle sliced bread.
Press using a spatula to flatten.
Let it cook until browned, then flip to the other side.
Press again to flatten.
Do the same process for the remaining bread slices.
