Put the cheese in the mortar and pestle and grind them.

(it’s possible for you to do this in batches if your mortar and pestle are small.)

Transfer them to a bowl once done.

Preparing the ingredients for the cheesecake

After this, mix it with the rest of the cheese.

Add 1 & 1/2 melted butter to the mixture and stir well.

Mix it to make a dough, then knead it.

Placing the dough into the baking pan

While thats chilling, roll out your dough.

Seal the edges and trim them off to make a nice, neat square.

(At this point, you have two layers of pastry and one butter in the middle.)

Fold that in half and roll it out.

Give it another fold, then let it rest in the fridge for about 30 minutes.

(Repeat this process 2 more times and then you are ready to use it.)

Once its baked, let it cool completely.

Wash some fresh berries and pile them on top of the cheesecake.
