Mix together and cook until well caramelized for about 45 minutes.
Step 3:
Add sliced mushrooms but set aside 1 1/2 to 2 cups of mushrooms.
Turn the heat to medium-high.

Saute them for about 15 to 20 minutes or until cooked down.
Stir often to avoid burning.
Turn the heat to high and bring it to a boil until it has a thick consistency.
Step 6:
Using a hand blender puree the soup on high speed.
Puree it until it has a smooth consistency.
Give the soup a good mix.
Step 8:
Place a pan on high heat and add 2 tablespoons of olive oil.
Saute the 1 1/2 to 2 cups of mushrooms for 4 to 5 minutes.
Season with salt, pepper, thyme, and parsley.
Mix, then remove from heat.
