The sausage originated in Bologna, Italy, where it was derived from the popular Italian sausage, mortadella.
It was cheap meat, which made it very accessible during the Great Depression.
In any case, we grew up eating and loving good old bologna.
I started by sauteeing some red onions in butter with salt and pepper.
Then I added my meat and my onions to the bread and Wow!!!!
