Prepare all the needed ingredients.
Place a large pot over medium-high heat and heat 4 tablespoons of olive oil.
Add in 1 diced yellow onion, 2 large,diced carrots, and 2 diced celery stalks.

Let the ingredients cook for about 5-8 minutes while frequently stirring until the onions turn translucent.
Bring the soup to a boil for about 8 minutes.
When the soup comes to a boil, reduce the heat to low, maintaining a gentle simmer.

Partially cover the pot with its lid and simmer while stirring occasionally.
Add additional broth if needed.
Season the soup with salt to taste if needed.
Let the soup simmer for 5 more minutes until the kale becomes tender.
Serve it hot and top it with chopped parsley or chives.
