There is nothing better than crispy and flavorful roasted vegetables that only require a few simple ingredients.
Your whole family, even the kids, will surely enjoy these snacks.

Slice the eggplant, zucchini, potatoes, and peppers into long strips.
For the potatoes, see to it to peel the skin.
Grate 2 cloves of garlic or finely mince them and chop the parsley.

Add both into the breadcrumbs mixture.
Combine all ingredients well.
Step 3:
First, get the slices of peppers and place them in a bowl.
Drizzle some olive oil and mix.
After that, put them in the breadcrumbs mixture and toss to coat.
Do the same with the other sliced vegetables.
Step 4:
Line a baking tray with parchment paper.
Place the vegetables in a single layer with space in between on the baking tray.
Once done, drizzle some more olive oil on top.
Once done, remove from the tray and serve.
