Season with 1/2 tsp of kosher salt.
Cook it until the onions are browned a little.
Next, crack 12 eggs in a large bowl and beat them.

After this, back to the onions, you might now add the roughly chopped spinach to the pan.
Once the spinach wilted down, add 2 tsp fresh thyme and stir it.
Add the diced potatoes and 1 & 1/2 cups of milk.

Stir it lightly and season with a little pepper.
(The potatoes should be tender but not mushy and the liquid should be slightly reduced and thickened.)
After this, turn off the heat and let it cool to room temperature.
In the meantime, grease the casserole dish and grate the cheese.
