Cover it with a kitchen towel and place another baking tray, then flip.

Whip the mixture until well-combined.
Beat the whipping cream until stiff peak, then gently incorporate on the mascarpone mixture.
Unroll the cake and spread the filling evenly.

Sprinkle candied orange peel and reroll the cake, then refrigerate for 2 hours.
