Next, heat a large pan over medium heat, then add 3 tbsp olive oil.
Add the mushrooms and sear them on both sides for three minutes or until they are browned.
Once they are browned, season them with some salt and pepper.

Next, in the same pan, put the onion in and reduce the heat to medium-low.
Add more olive oil if the pan is dry and cook the onion until soft and translucent.
After this, add 3 oz of tomato paste and fry the paste in the oil for 5 minutes.

(you could now boil the spaghetti pasta at this point.)
Scrape the brown bits off the bottom of the pan.
Now, after the pasta water boils, get a cup or two and add it to the sauce.
Turn off the heat and add the cheese and parsley.
