For the second steak, make a coffee slurry by adding a bit of water into the coffee grind.

Add salt and mix the slurry thoroughly.
For the last two steaks, go the traditional way and just cover them with salt.
Place each steak on a cooling rack and put them in the refrigerator for 24 hours.

Chop them into small bits; set them aside.
Next, wash your red potatoes and cut them into four pieces each.
Place potatoes in a large baking tray.

Lay them well, making sure that the potatoes are not on top of each other.
(You may want to use two baking trays for this.)
Place them in the oven set at 400 degrees F and let them cook for 30 minutes.
After 30 minutes, pull out the potatoes from the oven and put them in a bowl.
Add a good amount of garlic butter sauce to the potatoes followed by parmesan cheese and bacon bits.

After 24 hours, its time to get the steaks out of the refrigerator.
For the first steak, scrape out the coffee as much as possible.
Season it with salt, freshly ground black pepper, and garlic powder.
For the last two steaks, rub the first one with a coffee rub.
The second one will be the control, seasoned only with ground black pepper and garlic powder.
