Rinse it off, then transfer it to a large pot with water.
Place it on the stove over high heat.

Add 1/2 tsp of salt to season the potatoes.
Once it boils, lower the heat to medium, then let it simmer until fork tender.
While the potatoes are cooking, go ahead and start preparing the other ingredients.

Cut the rotisserie chicken into bite-size pieces, transfer it to a bowl, then set it aside.
Whisk it together well to combine.
Mashed it all up using a handheld potato masher.

After baking, garnish it with some chopped fresh parsley.
