If you have leftover potatoes, this is the best way to use them.

Fill a pot with water and place over heat.

Add the sliced potatoes and some salt.
Cover with the lid and cook until its soft.
Step 2:
Once the potatoes are cooked, strain them and place them in a bowl.

Mash the potatoes using a fork or potato masher.
Chop the parsley, then add to the mashed potatoes.
Set it aside to let it cool completely.

Step 3:
Grate the cheese and add to the mashed potatoes.
Season with some black pepper.
Step 4:
Stack the slices of cheese and cut them into 4 squares.
Do the same for the cooked ham.
Step 5:
In a different bowl, crack 2 eggs and beat well.
Sprinkle the breadcrumbs on a plate.
Scoop another spoon of the mashed potato and place it on top.
Form into a big oval.
Continue the same process for the remaining mashed potato, ham, and cheese.
Step 7:
Dip each potato cake in the beaten egg, then coat it with breadcrumbs.
Step 8:
Pour a generous amount of oil into a pan, then fry the potatoes.
Cook them until golden brown.
