Heat a large cast iron pan on medium-high heat and add 2 tbsp of avocado oil.
Sear the meat for 4 to 5 minutes on each side to give it a brown crust.
After searing it, transfer the meat into the slow cooker.

you could add two bay leaves to give it an extra flavor.
Cover with a lid and set the slow cooker to eight hours on a low setting.
Shred the meat using two forks.

Once youre done, transfer the meat to a serving platter and add the veggies.
