Step 2:
Pour 2 cups of water into the chicken.
Season with salt, pepper, 1 teaspoon of thyme, and 1 teaspoon of basil.
Cover with the lid and let it simmer for 15 minutes.

Step 3:
Dice the onions and chop the carrots and garlic cloves.
Step 4:
In a new saucepan, add some vegetable oil and butter.
Once the butter is melted, add the diced onions.
Fry for about 1 minute, then add the carrots.
Cook for another 2 minutes.
Next, add half of the chopped garlic cloves and fry for just 30 seconds.
Step 5:
Add 2 tablespoons of flour to the pan, and mix everything together.
Add the tomato puree and give another mix.
Step 6:
Add the tomato mixture to the chicken and mix well until well incorporated.
Add 1/2 cup of white wine and cook for 2 minutes.
Step 9:
Chop the parsley and sprinkle it on top of the chicken.
Turn off the heat and serve.
