Attach the mixture to the food processor and mix it up nicely.
Mix in 1/4 cup unsalted cold butter and 4 tablespoons cold water.
Place the dough in a plastic bag and place it in the fridge for half an hour or overnight.

Peel and slice the apples into bite-sized pieces.
Toss in the ingredients to distribute them evenly.
Cover the pan and let it cook for 10 minutes on medium-low heat.

For the filling, combine all the ingredients in a medium-low heated pot.
Whisk as it cooks for 7-8 minutes until you notice the caramel thickening.
Remove it from the heat, transfer it to a bowl, and set it aside.

Strain the apples in a colander over a bowl to catch all the juices.
Give the colander a good shake to get as much juice as possible.
Toss the caramelized juice together with the apples to evenly coat them and set them aside to cool completely.
Sprinkle some flour on your pastry mat and place it on the dough.
Check for cracks and pinch them back together.
Then, sprinkle on another layer of flour.
Use a circle cookie cutter to cut the cookie crusts and place them on a baking sheet.
For the strips, cut them using a knife guided by a ruler.
With your egg wash mix, brush it on the pastry circles to serve as glue.
Add a nice glob of caramel to the center of your pastry circles.
Add 1 12 tbsp apple pie filling to the caramel.
Then, layer on the pastry strips.
Brush with egg wash and layer on the second layer of strips.
Repeat the process with the other cookies.
