Frequently mix the vegetables to prevent color from forming.
Mix well, then cook for another 6 minutes.
verify to stir it frequently.

Bring it to a boil.
Step 4:
Remove from heat.
If you are using an immersion blender, you could puree it straight away in the pot.

Step 5:
Once the soup is smooth, add 2/3 cup of heavy cream.
Mix until well combined.
Taste, then season with salt and pepper.
Serve with toasted bread.
