I never thought I would learn something more out of a roasting potato tutorial.

First, peel and chop your potatoes.
Boil your potatoes in salt and baking soda so the moisture is there and leaves to a thicker crust.

The baking soda makes a difference to the potatoes because it gives more surface area and higher crunch.

Next, make flavored garlic and herb oil then strain it out in a large bowl.

I think this is a smart idea and a tip I learned from watching this video.
Then, drain the cooked potatoes and add them in the bowl with the infused oil.
Toss the potatoes until they get a little pasty on the exterior of each chunk.
