Using a cookie cutter, cut the cookie dough and bake in a preheated 180C oven for 11-13 minutes.
Using a blender or mixer, combine the walnuts, powder sugar, salt, and scraped vanilla bean.
Add cake flour, cold butter, and egg yolk to the mixture while blending in between each ingredient.

Combine unsalted butter, powder sugar, salt, and egg white in a mixing bowl.
Add sifted cake flour and ground almonds in the mixture, then combine.
Put vanilla extract and mix before transferring it to a piping bag.
On a cookie sheet, squeeze and create little swirls or be creative and make your design.
Bake in a preheated 160C oven for 18-22 minutes.
Bake in a preheated 170C oven for 11-13 minutes.
Assemble all cookies in a lunchbox.
