Step 2:

In a separate bowl, crack 4 eggs.

Whisk the eggs using a hand mixer.

Continue whisking while adding 1 cup of sugar.

Mix until the mixture turns creamy and pale.

Next, add 3 tablespoons of orange zest and 1 tablespoon of orange juice while continuously whisking.

Then pour 3/4 cup of vegetable oil.

Step 3:

Add the dry ingredients into the bowl of the egg mixture in two batches.

Mix them gently after each batch using a spatula.

Step 4:

Add the finely grated carrots into the mixture.

Fold the mixture until well combined.

Step 5:

Line a 7.87 x 7.87 round pan with parchment paper at the bottom.

Pour the cake batter into the pan and add 2 tablespoons of raisins.

If you dont want raisin you’ve got the option to skip it.
