Directions:
Step One
In your mixer put in your shortening and butter.
Mix that all together.

Step Two
Add in your sugar to the shortening and butter.
Once it is mixed, add in your egg whites while still mixing.
The mixture should not be creamy and frothy.

Step Three
Pout in baking soda, baking powder and salt.
Get it mixed in good, then add in your buttermilk and flour while alternating and still mixing.
Also pour in your vanilla flavor during this step.

Step Five
This is a layered cake, so you will pour the batter into 4 pans.
Fill your pans with batter and then tap the bottom of the pans to remove the air bubbles.
Once the cake is cool flip them out of the pans to cool for a little longer.
Step Seven
Mix your icing.
In a bowl, pour a can of cream of coconut and whisk it up until it gets frothy.
If the consistency is too hard, add in a bit of coconut milk.
This is what you will sprinkle on top of the icing.
Next, combine the cream of coconut in the new bowl with a half stick of butter and mix.
Add in your powdered sugar as the cream and butter mix.
you might pile some crumbles between the layers as well.
