Add parsley, garlic, thyme, salt, and pepper, then give it a good stir.
Combine the cream and corn starch in a cup or mixing bowl, whisk it until well combined.
Then add the gnocchi into the soup and pour the cream and cornstarch mixture as well.

Let it simmer for about 4-5 minutes until the gnocchi is tender and the soup has slightly thickened.
Stir in the spinach and parmesan, then serve warm.
