Last night, I was browsing the internet for meals I will serve on the dinner table this Christmas.
I already had everything set from appetizers to the main course, the only thing thats missing is dessert.
Set aside and allow to cool until it is no longer warm to the touch then proceed.

In a large bowl, beat the butter with a hand mixer until the texture becomes smooth and creamy.
Drizzle in the melted and cooled chocolate, then beat until completely combined.
Gradually add powdered sugar, salt, vanilla, and peppermint extracts, then stir until completely incorporated.
Add the heavy cream while slowly increasing the speed to a high setting, beat for 15-30 seconds.
Dollop or pipe the filling onto the cookies then top with another cookie.
