I am always on the lookout for a new spinach recipe.
This spinach and potato casserole makes the perfect side dish for any meat entree, especially roast lamb.
You start bycooking your mashed potato mixture and spreading over the bottom of a greased casserole dish.

Then, you cook your spinach and mushroom mixture in a skillet and add the bechamel sauce and blend.
Then, pour the creamy spinach mixture over the mashed potatoes and top with cheese.
This is a delicious casserole, I hope everyone tries it!
