Preheat the skillet over medium heat.

Get the bacon and cut it into 1-inch pieces.
Sprinkle some olive oil on the skillet, then add the bacon pieces.
Cook until brown and crispy (or your preferred doneness).

Wash the vegetables.
Chop the bell peppers into small pieces, then dice the potatoes.
Put the bell peppers into the same skillet over medium-high heat.
Next, add the potatoes, and cook until golden brown for 10 minutes.
Add the bacon and stir.
Remove from the skillet, drain the oil, and place into a plate with a paper towel.
Step 4:
Put some butter into the skillet, then let it melt.
Once melted, fry the 4 eggs in the skillet.
Season it with salt and pepper.
Add a pinch of kosher salt.
Place the bacon and vegetables around the fried eggs.
Top it with shredded cheese.
Once melted, garnish with parsley.
