Place them into a large bowl.
Dice the green onions.
Once done, add them and the eggs to the shredded squash.

Stir all ingredients to combine.
Mix all ingredients well.
Step 3:
Put some panko crumbs into a plate.
Scoop out the squash batter using a 2-inch ice cream scoop and place it into the crumbs.
Coat the top with more and flatten.
Put it over medium-high heat.
Once sizzling, place squash fritters into the hot oil and cook for 3 minutes until golden brown.
Flip them over and cook the other side for another 2-3 minutes.
Serve on a plate.
